When I started Michael Raymond Desserts, the only question I got from my prospective customers was how long we were going to be in business. In the late 70's and 80's, Miami was known to have a lot of fly by night businesses. In with a bang one day and disappear in the night the next. Come for the winter, go away when the heat turns up.
The only answer I could give the customers was that I will persevere. So after 120 one hundred hour weeks, being chef, cook, baker, salesman, delivery man, book keeper, decorator, etc., it is now 38 plus years, almost 39 and I'm still here. Those with doubts are long gone.
The most difficult part of sustaining a business this long is preserving the quality and consistency of what you do. We still hand produce our items, including our signature Candy Walnut Apple Pie, exactly the same way as I did when I began. No cutting back on quality ever. We are what we always were, and will always be.
